Instructions
Weigh A1 and stir briefly
Weigh A2 and stir until all ingredients are dissolved
Adjust the pH to approx. 5 - 5.2 using citric acid/arginine
Add A1 to A2 while stirring to ensure no clumps form
Weigh B, stir, add to A and stir in
Homogenize vigorously with a mixer - avoid air bubbles
Add C and stir in thoroughly
Check the pH again
TIP
Sodium Stearoyl Glutamate is the perfect emulsifier for binding large amounts of water and providing stability to the product. Only a small amount is needed here to emulsify the fat phase, as the high proportion of gel formers takes over the stabilizing role.
